Mushroom gravy
A nice chunky gravy to have over vegetables

Ingredients
  1. 1 tbs olive oil
  2. 1 diced onion
  3. 1 tsp thyme
  4. 2 sliced garlic cloves
  5. 3 handfuls sliced mushrooms
  6. 1 handful cauliflower florets (1/4 cauliflower approx)
  7. 2 cups chicken or vegetable stock
  8. Salt and pepper
Instructions
  1. In a medium saucepan, add 1 tablespoon oil & heat. Add diced onion, 1 tsp thyme & 2 sliced garlic cloves. Sauté until golden. Add 3 handfuls sliced mushrooms & 1 handful of cauliflower. I use the diced core or stalk if I have it from making other things. Add 2 cups of chicken or vege stock and let simmer for same time as veges take to cook (1/2 hour). Remove a few spoons of sliced mushrooms & reserve to mix in afterwards if you like a chunky gravy. Blitz the contents of the saucepan until smooth. Season with a heap of black pepper & you're ready to eat.
Notes
  1. Freeze sauce in ice cubes for a quick sauce.
