Confit of sweet capsicum & onions ….great in a Bento lunch box !~

Hi !

A yummy little topping for all things Japanese as well as pretty much anything else ! The slow long cooking helps it become super sweet, a great balance for all the vinegar and acidic flavours in Jap cuisine, love it.

Ingredients
  1. 1 brown onion, sliced thinly
  2. 2 red or yellow capsicums, sliced thinly
  3. 2 garlic cloves, minced
  4. Pinch salt
  5. 1 tbs olive oil
Instructions
  1. Slice the vegetables into thin strips. Heat a medium suacepan and add all ingredients.
  2. Cook over a medium low heat (10-30 mins depending on how brown you want them).
  3. Turn off and leave to cool in the pan. Season with black pepper.
Notes
  1. Fabulous as part of a bento box. Also great over zucchini pasta, in salads or as a crunchy sweet topping for soups.
  2. Stores very well in the fridge, flavour intensifies the longer you leave them. They last at least five days.
