Creamy tomato & carrot soup … one pot quick go-to !

Absolutely love this soup, my lovely mother-in-law made a version of this many years ago with potato and it has stayed as a family favourite. I have simply substituted the potato for carrots, so it is now not tomato and potato soup, but tomato and carrot soup ! Super quick and easy to make. An ideal one for a time poor week night or end of the week as it needs no fancy fresh ingredients, should be all in the pantry and fridge. I use this a bit like the cauli & leek soup, as a quick meal if I’m out of time & good ideas !

Creamy tomato & carrot soup

Creamy, simple, tasty soup using ingredients from the pantry.

Ingredients
  1. 1 tbs olive oil
  2. 1 brown onion, chopped
  3. 2 garlic cloves, diced
  4. 3 tbs fresh basil, parsley, oregano (or use Gourmet Garden Italian Mix fresh tube or 3 tsp dried herbs)
  5. 2 x 400g tins low salt diced tomatoes
  6. 4 cups of stock (vegetable or chicken, low salt)
  7. 3 medium carrots, chopped
  8. 4 cups water
  9. Salt and pepper
Instructions
  1. In a large saucepan heat 1 tbs olive oil. Add onions, garlic and herbs.
  2. Cook for 5 minutes until starting to brown.
  3. Add the carrots, tomatoes, water and stock. Cook for 35-45 minutes until mushy.
  4. Blitz until smooth and creamy.
  5. Season & devour.
Notes
  1. You can also cook this soup minus the olive oil, just add all to a pan and cook, adding an additional 10 minutes.
  2. Freezes very well, great in portions for a quick, tasty meal.
  3. You can also add chilli or cayenne for a spicy kick.
  4. Serve with toast or crumpets for the rest of the family.

    Hi Jodi. Just made this tonight – my first time ever making a soup and it was delish!!! How long will it last in the fridge for??

      Hi Becky ! So glad it worked out for you 🙂 it was last at least 4 days in the fridge & you an also freeze everything on OptiCook in portions as there’s no dairy or egg to curdle or seperate .
