Crunchy blooming onion … So delish ! Like onion rings !

A good one for a gathering at your place. Looks good on the table and the fact you can dig in as well is so good this time of year ! 

There are plenty of you tube videos with a more detailed instructions on how to cut the onion. The KFC copy cat spice mix is also simple to make and keeps well in a jar. It’s great to use on your roasted vegetables or other dishes as a tasty seasoning.

Firstly, cut the top of the onion, peel it leaving the bottom core intact. Cut into 16 pieces, 4 at a time. Turn over the carefully seperate the crescents.

Crunchy blooming onion
Serves 8
A crunchy lunch or party dish. Much like onion rings. The flower shape looks impressive, so a good one for serving to others !

Ingredients
  1. 2 cups cauliflower florets, roughly chopped
  2. 2 cups low salt stock
  3. 4 tbs KFC copy cat spice mix (see recipe here http://www.opticook.org/?p=713 )
  4. 1 large brown onion
Instructions
  1. Preheat oven to 220°C.
  2. Microwave cauliflower in stock until cooked. Approx. 10 mins.
  3. Drain. Add the spice mix. Roughly blitz the cauliflower mix until it is creamy but still has some chunks in it (see pic)

  5. Dip the cut onion into the cauliflower mix upside down.
  6. Place in a small oven tray. With a tsp add more of the cauliflower mix where the onion is bare.
  7. Sprinkle 2 tbs of the spice mix over the top and then spray with olive oil spray.
  8. Place uncovered in oven for 25-30 mins, until cooked, blown and crunchy.
  9. Serve with Low cal/carb such as BBQ sauce, tomato sauce or sweet chilli sauce. It was also be served with the cauliflower mayonnaise.
  10. Eat by pulling off an onion crescent and dipping into the sauce/s. Tastes much like onion rings. Yummy !
Notes
  1. Can also use any other spice mix you like
  2. Great for Xmas parties
  3. Last minute dish, cannot freeze or refrigerate. The cauli mix can be made ahead, as can the cutting of the onion.
