Feeling frenchy ? Beefy French onion soup with “cheesy” topping

Felt like something nice and warm for lunch today as it’s such a cold, windy winter’s day out there, thought of my mum’s French Onion Soup, of course minus the naughty topping ! Lovely & warm & toasty … super duper easy to make, no need to do the topping if you don’t have time or a grill function on your oven ! The key to this is caramelising those onions down to a dark brown but not burnt state, take your time and you won’t be disappointed !

Ingredients
  1. 2 brown onions sliced into thin rings
  2. 1 clove garlic crushed
  3. 1 tsp thyme
  4. 2 cups beef stock
  5. 2 tbs olive oil
  6. 1 cup cauliflower (riced)
Instructions
  1. Heat the oil over medium - high heat. Add the onion, thyme and garlic. Stir over medium heat until nicely browned, approximately 15 mins. Keep an eye to make sure it doesn't burn.
  2. In the microwave cook cauli rice for 3 mins. Season with salt and pepper and stir to combine.
  3. Add beef stock to the onions and bring to the boil. Reduce heat and cook for 10 mins.
  4. Spoon into ramekins and spoon cauli rice on top. Give a light spray with olive oil spray and grill until the top is bubbling and browned.
  5. Leave to rest for a few minutes as its boiling hot, season with black pepper and then devour.
Notes
  1. If you are doing the topping, this soup needs to be grilled at the end to get the colour on top, so either use oven on grill function, separate grill or use fan bake and leave a little longer.
