Vegan “Kentucky Fried Copy-Cat chicken” cauli pieces – Finger lickin’ good mumma !

This will be my last recipe for a few days, as we are moving house, tomorrow is the start of a series of D-Days ! 

So, I will keep it short and sweet. Look, I am a vegetarian, but still love my battered and crumbed things. And have pinched a little of the coating off other peoples fried chicken on occasion too. Nom nom. 

This recipe is simply cauliflower and spices with a spray of oil …

Vegan Fried KFC Copy Cat "chicken" pieces

Crunchy, tasty, lip smacking good oven baked cauliflower "chicken" pieces.

Batter
  1. 2 cups cauliflower florets, chopped
  2. 2 tbs KFC Copy Cat spice mix (approx half)
Crumb
  1. 4 cups cauliflower, riced
  2. 2 tbs KFC Copy Cat spice mix (approx half)
Cauli "chicken" pieces
  1. 7 cauliflower florets (2 cups), cut into 5cm square florets (approx)
  2. Olive oil spray
KFC Copy Cat Spice mix
  1. 1 tbs paprika
  2. 1/2 tbs onion salt
  3. 1/2 tsp celery salt
  4. 1/2 tsp dried sage
  5. 1/2 tsp garlic powder
  6. 1/2 tsp ground allspice
  7. 1/2 tsp ground oregano
  8. 1/2 tsp chili powder
  9. 1/2 tsp black pepper
  10. 1/2 tsp dried basil
  11. 1 tsp Herbamere or salt, to taste.
  12. (or you can use a suitable store bought chicken spice mix)
Instructions
  1. Preheat oven to 200°C (fan forced). Place oven tray you will use in the oven to preheat.
  2. First make the batter: Microwave cauliflower in 1/2 cup water for approx. 5 mins until soft then drain. Blitz until it forms a thick sauce consistency. Mix in the spice mix and season. Set aside.
  3. Secondly make the crumb: In another bowl, microwave the cauli rice for 4 mins. Tip into a tea towel and with dishwashing gloves on, twist and squeeze until much of the water is removed (this will give the outside the crunch & stop it being soggy). Tip back into the bowl and mix together with the leftover spice mix. Set aside to cool.
  4. Dip cauliflower "chicken" pieces in the batter, spooning over to give a generous coating. Then roll and coat in breadcrumbs (see pic). Remove tray from oven and place pieces on baking paper on the hot tray. Spray with olive oil spray.
  5. Bake in oven for 35 minutes, turning if needed at 20-25 mins. Serve warm with Fountain "Good Choice" BBQ, tomato or sweet chilli sauce or any other sauce to your liking.
Notes
  1. Needs to be eaten straight from the oven, they do go a bit soggy after sitting for a while
  2. If you don't have the spices noted in the mix above, buy a suitable chicken seasoning mix or whatever spice mix you like.
  3. Make sure you are reasonably heavy handed with the batter and the crumb, so the entire cauliflower piece is coated well.
  4. Not suitable to freeze or re-heat. You could freeze all the parts and then pull together at the last minute.
  5. Great for a weekend snack or if others in the house are having takeaway and you want something similar!
