First salad … Welcome sun ! Grain-free Middle eastern tabbouleh

Here comes the sun ! Had a casual BBQ lunch with a few family members today, so thought it was time to get my salad hat on. Cannot wait to try more salad recipes ! This one is very tasty. No-one guessed it was cauliflower not cous cous, so I guess that’s a good sign, unless they were just being polite. It’s all gone though ! This one may look like any other tabbouleh, there’s a bit of a fav flavour combo going on in there. I got the Harissa spice mix from Coles supermarket. It should be readily available. Remember to get the spice mix, not the paste, the paste is damn hot and not too pleasant in this dish !

Middle eastern tabbouleh

Tasty middle eastern salad, perfect for a BBQ. Great to taking out so you have something yummy to eat that looks like the "normal" one.

Ingredients
  1. 1 small cauliflower blitzed to cous cous size
  2. 1 carrot, grated
  3. 1 onion, finely diced
  4. 4 garlic cloves, chopped thinly
  5. 2 tbs Harissa spice mix (I use Masterfoods)
  6. 1 tbs ground turmeric
  7. 1 tsp cayenne or chilli powder (optional)
  8. 1 tbs vegetable stock powder (or chicken)
  9. 1 tbs dried mint (or 1/2 cup fresh chopped)
  10. 1/4 cup lemon juice
  11. Black pepper
  12. 1 cup roughly chopped fresh parsley
  13. 1 medium tomato, diced
  14. Sprinkle sumac for garnish (optional)
  15. Olive oil spray (optional)
Instructions
  1. In a large fry pan, spray with oil over medium heat. Add onion and garlic. Cook until nice and brown, approx 15 mins. Add Harissa, turmeric, stock powder and mint. Also add cayenne or chilli powder if using. Once mixed, add the cauli cous cous and grated carrot. Stir well to combine. Add 1/2 cup water. Leave to cook for approx 15 minutes, stirring occasionally.
  2. Once cooked turn off the heat, add lemon juice and black pepper. Once cooled slightly, add chopped parsley and tomato. Mix.
  3. Tip into big bowl. Sprinkle with more black pepper and sumac if using. Squeeze more lemon over the top if needed.
Notes
  1. To make the cous cous, you will need a food processor. Blitz until the cauliflower looks like the tiny grains of cous cous (finer than cauli rice).
  2. Add grilled Halloumi or chicken kebabs to the rest of the meal for other family members.
  3. Add other grated vegetables
  4. Great for taking to work in a packed lunch.
