Grain-free soba noodle salad

Hi all !

A quick and tasty way of using zucchinis and your spiraliser ! Yes, you do need a spiraliser for this dish. Awesome accompaniment to other Jappy things, sushi, fresh salads, or just by itself. Yum yum.

Grain-free Soba noodle salad

Zucchini noodles work so well with soy, ginger flavours. Very easy to do once spiralising is done, ready in a jiffy too.

Ingredients
  1. 3 zucchinis, peeled and spiralised
  2. 4 cups water
  3. 2 tsp stock powder, I used Massel vegan chicken stock
  4. 3 tbs gluten-free soy sauce, low salt is possible
  5. 2 tsp ginger, minced
  6. 1 tsp rice wine vinegar
  7. 1 tsp Cooking Sake , I use the low cal OBento brand
  8. 1 tsp Sesame oil
  9. 1 tbs soy sauce, extra
Instructions
  1. Simply bring the stock, soy, ginger, vinegar and sake to the boil. Add the zucchini noodles. Cook for 3 mins, until cooked but still firm.
  2. Drain immediately under cold water. Let it run until the noodles are cold.
  3. Add the extra soy sauce and sesame oil, mix and cover. Let sit in the fridge for at least half an hour to let the flavour develop.
  4. Serve with salad or just a few chopped spring onions.
