Grain-free sushi rice … cauliflower to the rescue !

Hi all !

A very simple and tasty way to prepare the new “super food” cauliflower. The rice vinegar gives it a lift and covers some of the “not nice” smells cauliflower can exude sometimes ! Great for making sushi and also serving under Teriyaki or other Japanese inspired dishes.

Grain-free sushi rice
Yields 4
A simple Japanese style rice, great for making sushi. Made with cauliflower florets, so grain-free and super low carb too.This makes 4 cups of rice.

Ingredients
  1. 1/2 head of a medium cauliflower (if making with the OptiCook cauli teriyaki drumsticks use the other half of this cauliflower)
  2. 1 tbs rice wine vinegar
  3. Salt & black pepper
Instructions
  1. Cut the cauliflower in half and remove the thick stem. Cut or break each half into smaller pieces, trimming off any thicker bits of stem that remain.
  2. Place all of the cauliflower pieces into a food processor & pulse several times until the cauliflower is a "crumbly" texture. See pics.
  3. Transfer to a microwave-safe bowl, cover with cling wrap. Poke a few holes with a fork to allow steam to escape. Cook on high for 3 mins.
  4. Remove the cauliflower from microwave and uncover. Pour vinegar onto the cauliflower, stir to combine then set aside to cool. Season well with black pepper.
Notes
  1. If you don't like cauliflower you can substitute with the OptiCook zucchini fried rice.
