Indian mint chutney , herby green goodness !

Well, I was a bit suss about how this would turn out, looks a bit like green sludge !

But don’t be scared, it was a great compliment to the tandoori skewers I made last night and all curries I would think !

Ingredients
  1. 1 zucchini, trimmed but unpeeled & chopped roughly
  2. 1 1/2 cups fresh mint leaves, chopped
  3. 1 cup fresh coriander leaves, chopped
  4. 1 green chilli, chopped
  5. 1/2 small onion, chopped
  6. 1 tsp ginger, minced
  7. 2 garlic cloves, minced
  8. 1 tsp ground cumin
  9. 1 tsp garam masala
  10. 2 tbs lemon juice
  11. Pinch stevia (optional)
Instructions
  1. In a small saucepan with minimal water steam the zucchini , adding a few mint leaves for flavour.
  2. Strain over sink and with all other ingredients blitz in a food processor or using a stick blender until all combined and smooth. Adjust the tanginess and sweetness to your liking, I like a pinch of stevia added to mine.
Notes
  1. Note the yields are in tablespoons, so this recipe makes 30 tbs of chutney !
