Japanese ginger & carrot salad dressing

Hi !

A super quick, 10 minutes are you are done, salad dressing. Very fresh tasting, zingy with the ginger & sweet with the carrot. Keeps very well in the fridge too, or would freeze well in ice cube trays for a quick dressing when needed !

Japanese ginger & carrot salad dressing

A gingery sweet dressing, perfect over a basic salad or Japanese bento box

Ingredients
  1. 2 tbs olive oil
  2. 1 tbs sesame oil
  3. 1 1⁄2 tsp ginger, grated or minced
  4. 1/4 cup rice wine vinegar
  5. 3 tbs soy sauce
  6. 1 tbs Stevia
  7. 2 medium carrots, peeled and roughly chopped
  8. 1⁄2 medium brown onion, roughly chopped
Instructions
  1. Combine oil, vinegar, soy sauce, stevia, ginger, carrots, and onion in a food processor, and process until smooth. Place in a sieve over a bowl and let drip, then push through sieve with a spoon, using the liquid as the dressing.
Notes
  1. Serve over simple lettuce & tomato side salad. Great for bento lunch boxes. It is pictured served over thinly sliced radishes and cucumbers.
