One pot coconut curry noodles … for when you ain’t got no time for ‘dat !

I ain’t got no time for ‘dat ! Done and dusted in 40 mins including 30 mins cooking time. A one pot wonder, no foffing or fussing around, just chuck it in and eat it after 30 mins. I really love this recipe, it’s a great combo. The coconut essence & cauliflower combination gives a great faux-coconut milk base. A great mid week meal.

Of course you can supplement the vegetables for anything you have in the fridge or freezer. You do need the cauliflower and onion to give the coconut base though.

Enjoy !

Ingredients
  1. 1 tbs coconut oil
  2. 1 brown onion, sliced
  3. 1 tsp garlic , minced
  4. 1 tsp ginger, minced
  5. 1 tsp ground coriander
  6. 1 tsp ground cumin
  7. 2 tsp ground turmeric
  8. 1 cup cauliflower florets, chopped finely
  9. 4 cups of chicken or vegetable stock
  10. 1/2 tsp coconut essence
  11. 1 carrot, diced
  12. 1/2 red capsicum, diced
  13. 1 cup broccoli, cut into small florets
  14. 5 snow peas, ends trimmed
  15. 1 zucchini, spiralised for noodles (see pic) - or peeled into strips using a peeler
  16. 1/2 lemon squeezed
  17. Salt and black pepper
Instructions
  1. In a medium-sized saucepan on medium heat, add coconut oil, brown onion, garlic, ginger, coriander, cumin and turmeric. Cook, occasionally stirring for five minutes.
  2. Add cauliflower florets, coconut essence and stock and cook for 10 minutes. Take off heat.
  3. Blitz with a hand stick blender (or in a bench top blender) until creamy. It doesn't matter if there is few chunks of onion left.
  4. Add the carrot and red capsicum. Cook until soft, approximately 15 mins. Add water if necessary (ie. if you like more sauce).
  5. Add the broccoli, snow peas and the zucchini noodles. Cook for a further 5 mins stirring and then serve hot with the lemon juice drizzled over the top. Yum.
Notes
  1. Supplement other vegetables from your fridge.
  2. Can be frozen up to adding the zucchini noodles, this needs to be done at the last minute.

    Hi Joni,
This dish is sooooooo yummy, made it last night for the first time. It’s going to be part of my weekly/fortnightly rounds. A question is how does it freeze, it looks like it could freeze well but wanted to check.
    Many thanks
    Philippa

Oh my gosh! I think you may be an angel brought down from heaven to help me. I want to try everything you have here. I was getting a little fanatical about doing the Intensive phase and, to be honest, wasn’t eating the vegetables. I then realised I really should to avoid having an unhealthy relationship (on the other extreme) with food. And here you are making it so exciting. I wish it was tomorrow already so I could try out one of your recipes. I never realised good food could be so simple AND delicious and outright good for you. These aren’t intensive phase dishes, they are forever dishes. I LOVE YOU!

Hi Sarah ! Ah, I’ve just noticed the theme on the recipe cards has been changed. I’ve just restored it including the serve/yield and macro nutritional info. So you should be able to see how many serves each recipe has, it’s up the top of the recipe card. Cheers Joni ???
