Thai style fried rice with mushroom "steaks"

Tasty rice and mushroom steak dish. Very filling & addictive !

Ingredients
  1. 350g cauliflower (around ½ a head)
  2. 1 tbsp oil
  3. 3 cloves garlic, minced
  4. 3 tbsp soy sauce
  5. 1 cup of mixed allowed vegetables, diced
  6. Black pepper
  7. 2 large field mushrooms
  8. 3 tbs Fountain good choice sweet chilli sauce
Instructions
  1. Place mushrooms in shallow bowl with the sweet chilli sauce to marinate.
  2. Break the cauliflower into small pieces, and put them into a food processor. Blitz for a few seconds, until the mixture resembles rice.
  3. Heat the oil in a wok, and add the cauliflower rice. Cook for several minutes over a medium heat, stirring occasionally, until the cauliflower begins to turn just slightly golden brown.
  4. Add the garlic and vegetables, and cook for a further 4-5 minutes.
  5. Cook over a fairly low heat until done.
  6. Add the soy sauce and plenty of black pepper, mix well, and serve warm.
  7. Once you have removed the rice from the pan, reheat pan, add a tsp coconut oil and cook mushrooms gills down until collapsed and cooked through.
  8. Serve.

    Im definately going to try this one, but just 1 question, im on intensive, so will I go over on my oil limit for the day on this as I can only have 1 tsp? It looks so delicious!

    Hi Lisa ! You will be right with this one, 1 tbs of oil is equivalent to 2 tsp (metric) once you account for the mls cooked off as part of the process. It actually makes a little more than 2 serves too, they end up being very generous, so you may be able to stretch it to 3 too 🙂 all recipes are strict intensive suitable. Once I move onto transition, I’ll keep them in a seperate section on here to avoid confusion 🙂 Joni x
