Two-step coconut & ginger carrot soup (Vegan, plant-based + gluten, nut & grain free) … so easy & tasty

Hello all !

This one was a total fluke, I had run out of veggies after a big cook up a few days ago & had a few onions & carrots leftover plus a cup of cauli florets in the fridge. My freezer is also running low, so decided to throw it in, boil & see what happened.

Well, it was really good ! So I re-cooked noting down all the ingredients & again it turned out well. So here you go, no oil, one-pot, boil, blitz & serve.

If you are not following a VLCD regime, feel free to replace the coconut essence with a cup of coconut milk. Great for Optifast intensive phase. 

So as quickly as I threw this together, I’ll be off & I hope you enjoy it as much as I & family did yesterday for lunch !

Ingredients
  1. 4 medium carrots, roughly chopped
  2. 1 brown onion, finely diced
  3. 1 tsp Keens curry powder (less if you don't like the heat)
  4. Pinch of chilli powder (optional)
  5. 1 1/2 tsp fresh ginger, minced
  6. 6 cups chicken stock (I use Massel vegan chicken stock)
  7. 1 cup of cauliflower florets, chopped
  8. 3/4 tsp coconut essence
  9. 1/4 cup fresh coriander or parsley, to serve (optional)
  10. Cracked black pepper, to serve
Instructions
  1. Simmer all ingredients for approximately 45 mins in a covered pot until carrots are nice and soft.
  2. Blend until smooth & creamy and serve with black pepper & some coriander or parsley if so desired.
Notes
  1. Add a little water if it is too thick for your liking.
  2. Up or reduce the chilli depending on how hot you like it, adjust as you go.
  3. Great for freezing.
  4. The yield is 8 cups.

      Hi Carol ! It’s a flavouring available in the baking section of your supermarket. It’s in a small bottle and is very potent flavour wise !Cheers, Joni
