Zucchini, snow pea & mint soup – very easy & fresh as a daisy !

Good afternoon !

Here is a quick and simple zucchini soup. It’s also fresh, crisp, green & yummy. Did I say quick & simple ? I really enjoyed eating this as I rush after my little boy, one spoon here, another there, whenever there is the time. It didn’t matter if it got a bit luke-warm either, was tasty all the same.

Simple zucchini, snow pea & mint soup

Yummy fresh tasting green soup with the mint giving extra kick. Very easy to make too.

Ingredients
  1. 1 tbs olive oil
  2. 1 brown onion
  3. 2 cloves garlic, minced
  4. 3 medium zucchini, peeled & chopped roughly
  5. 3 cups low salt stock
  6. 100g snow peas, trimmed
  7. 3 tbs chopped fresh mint
  8. Salt & cracked black pepper
Instructions
  1. Heat oil in a large saucepan. Add the brown onion and garlic. Sauté for 5 mins.
  2. Add the zucchini and stock. Cook for 20 mins until nice and soft, longer if you have the time.
  3. Add the snow peas and mint. Cook for 5 mins.
  4. Blitz very well until smooth and creamy. The snow peas take a bit of blitzing to become smooth. Take the time or else they may be stringy, but it's well worth the effort. Taste and adjust, adding more mint if it's not strong enough.
  5. Season & serve. You can top with more mint if so desired.
Notes
  1. Freezes very well. Also will work with just zucchini or adding other greens like beans, spinach or watercress.
