Grain-free sushi rice … cauliflower to the rescue !
Hi all !
A very simple and tasty way to prepare the new “super food” cauliflower. The rice vinegar gives it a lift and covers some of the “not nice” smells cauliflower can exude sometimes ! Great for making sushi and also serving under Teriyaki or other Japanese inspired dishes.

A simple Japanese style rice, great for making sushi. Made with cauliflower florets, so grain-free and super low carb too.This makes 4 cups of rice.

Ingredients
- 1/2 head of a medium cauliflower (if making with the OptiCook cauli teriyaki drumsticks use the other half of this cauliflower)
- 1 tbs rice wine vinegar
- Salt & black pepper
Instructions
- Cut the cauliflower in half and remove the thick stem. Cut or break each half into smaller pieces, trimming off any thicker bits of stem that remain.
- Place all of the cauliflower pieces into a food processor & pulse several times until the cauliflower is a "crumbly" texture. See pics.
- Transfer to a microwave-safe bowl, cover with cling wrap. Poke a few holes with a fork to allow steam to escape. Cook on high for 3 mins.
- Remove the cauliflower from microwave and uncover. Pour vinegar onto the cauliflower, stir to combine then set aside to cool. Season well with black pepper.
Notes
- If you don't like cauliflower you can substitute with the OptiCook zucchini fried rice.
