Green bean salad with roasted tomato vinaigrette – great dressing !

Hello again everyone !

A super duper simple, easy peasy, quick and easy salad recipe. Great for a quick lunch, especially if you happen to have the oven on for other things, throw a few tomatoes in there and you will have a yummy vinaigrette in no time at all. 

Beans and fresh tomatoes top it off nicely. An awesome alternative to a plain lettuce salad.

This goes really well with the OptiCook mock potato salad and the OptiCook curried zucchini rice salad . They make a great trio.

Green bean salad with a roasted tomato vinagariette

Tasty steamed green beans with a sweet and tangy roasted tomato dressing.

The salad
  1. 4 cups of fresh green beans, top and tailed
  2. 1 tbs vegetable stock powder or cube
  3. 1/4 cup fresh basil, chopped (optional)
  4. 1/2 cup fresh tomatoes, halved or quartered
Dressing
  1. 1 cup of fresh tomatoes, either whole cherry or quartered medium ones
  2. 1 garlic clove, minced
  3. 1 tbs olive oil
  4. 2 tbs spring onions or shallots, finely sliced
  5. 1 tbs lemon zest
  6. 1/4 cup red wine vinegar (or other vinegar)
  7. 2 tbs olive oil, extra
The dressing
  1. Heat oven to 160°C. Place the dressing 1 cup of tomatoes in a small dish with the minced garlic and olive oil. Roast for approximately 15 mins until cooked and browned.
  2. Remove and blitz with the other dressing ingredients. Let sit to combine.
The salad
  1. Steam your green beans until cooked but still crunchy. Strain and run cold water over them to retain the green colour. Sit in an ice bath if you can as they will go bright green.
  2. Combine the beans, chopped fresh tomatoes and dressing into a bowl. Top with basil leaves if using, season and serve cold.
Notes
  1. Vinagariette freezes well. Also keeps well in the fridge for at least a week.
  2. You can use frozen green beans for this recipe. Also can use the vinagariette with any salad vegetables you enjoy.
