One pot coconut curry noodles … for when you ain’t got no time for ‘dat !

Of course you can supplement the vegetables for anything you have in the fridge or freezer. You do need the cauliflower and onion to give the coconut base though.

One pot vegan coconut curry noodles (nut, grain, gluten & dairy-free)

Super fast one pot wonder, coconut in flavour with a bit of spice. A great mid week meal in one pot.
Ingredients
- 1 tbs coconut oil
- 1 brown onion, sliced
- 1 tsp garlic , minced
- 1 tsp ginger, minced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 2 tsp ground turmeric
- 1 cup cauliflower florets, chopped finely
- 4 cups of chicken or vegetable stock
- 1/2 tsp coconut essence
- 1 carrot, diced
- 1/2 red capsicum, diced
- 1 cup broccoli, cut into small florets
- 5 snow peas, ends trimmed
- 1 zucchini, spiralised for noodles (see pic) - or peeled into strips using a peeler
- 1/2 lemon squeezed
- Salt and black pepper
Instructions
- In a medium-sized saucepan on medium heat, add coconut oil, brown onion, garlic, ginger, coriander, cumin and turmeric. Cook, occasionally stirring for five minutes.
- Add cauliflower florets, coconut essence and stock and cook for 10 minutes. Take off heat.
- Blitz with a hand stick blender (or in a bench top blender) until creamy. It doesn't matter if there is few chunks of onion left.
- Add the carrot and red capsicum. Cook until soft, approximately 15 mins. Add water if necessary (ie. if you like more sauce).
- Add the broccoli, snow peas and the zucchini noodles. Cook for a further 5 mins stirring and then serve hot with the lemon juice drizzled over the top. Yum.
Notes
- Supplement other vegetables from your fridge.
- Can be frozen up to adding the zucchini noodles, this needs to be done at the last minute.

Hi Joni,
This dish is sooooooo yummy, made it last night for the first time. It’s going to be part of my weekly/fortnightly rounds. A question is how does it freeze, it looks like it could freeze well but wanted to check.

Oh my gosh! I think you may be an angel brought down from heaven to help me. I want to try everything you have here. I was getting a little fanatical about doing the Intensive phase and, to be honest, wasn’t eating the vegetables. I then realised I really should to avoid having an unhealthy relationship (on the other extreme) with food. And here you are making it so exciting. I wish it was tomorrow already so I could try out one of your recipes. I never realised good food could be so simple AND delicious and outright good for you. These aren’t intensive phase dishes, they are forever dishes. I LOVE YOU!
