Simple 30 minute vegetable stew – simple, straight forward but not bland, nice “n” tasty !

A very quick simple recipe here. A great one for beginning cooks or those time poor, like me at the moment !
Awesome for the freezer in portions as well.
Better dash, Easter preparations are calling this afternoon !

A very quick and easy tasty vegetable stew. A great midweek quick meal.

Ingredients
- 1 tbs olive oil
- 1 red onion, diced
- 2 cloves garlic, minced
- 1 tsp sweet paprika
- 1 tbs ground cumin
- 1/2 tsp cayenne pepper (more or less as you like it)
- 1 tsp dried oregano
- 2 carrots, peeled & chunky diced
- 1 red capsicum,chunky diced
- 2 medium zucchinis,chunky diced
- 200g mushrooms, sliced
- 400g tin salt reduced peeled tomatoes
- 2 cups salt reduced stock
Instructions
- In a large saucepan, heat and add he onion, garlic, paprika, cumin, oregano and carrots. Cook for 5 mins until starting to brown.
- Add the capsicum, zucchini, mushrooms, tomatoes and stock. Cover and cook for 20 mins, stirring occasionally. You may need to add more stock/water if it dries out or take lid off if it is too watery.
- Serve in a bowl with fresh chopped parsley and coriander on top. Season well with black cracked pepper.
Notes
- Adjust the heat to your liking.
- Definitely freezes very well, a great one for making weekly portions
- Can be served with cauli rice or zucchini pasta too
