Cauli hummus is great & fills you up, can eat as much as you like. Make it as spicy as you like too, keeps well in the fridge for up to 5 days.

- 1 clove garlic
- water
- vegetables for dipping

- Place cauliflower florets on baking sheet + drizzle with olive oil + sprinkle with harissa + sea salt. roast for 30 minutes, flipping halfway through. remove from oven + cool for 15 minutes
- In a food processor, add cauliflower, 1 tbsp olive oil, lemon juice + garlic. blend to desired consistency, adding water, 1 tbsp at a time, if necessary. season to taste with sea salt
- Serve with vegetables
Notes
- This is made using a hot chilli paste with Tunisian flavours, Harissa, you don't need much, just from supermarket or possibly deli, lasts for ages & very flavoursome.
- Other spice mixes are good too ! Cauliflower takes on whatever flavour you give it

As I can’t have harissa due to spicy food having a reaction after having my gallbladder removed what can I use instead please?

Hi Toni ! Apologies for the delay, I somehow missed your post. I would recommend 1 tsp of paprika or a ground cumin & coriander mix. Even just Sumac, available from some deli / middle eastern grocery shops. Just add a little then keep adding until you are happy with the taste.
Cheers, Joni
