Super duper vegan Caesar salad !

Banging out the recipe as I shovel this salad in, I am so pleased with the result. I’ve tried to make it as quick and easy as possible. You can definitely just use the dressing recipe, and mix in with whatever vegetables you happen to have on hand. I did enjoy the flavour and crunch of the “cauli croutons” and the “carrot bacon strips”. I also did some slow roasted cherry tomatoes with thyme sprigs and garlic cloves, but chose not to put them on, but you could definitely do that too.

Vegan Caesar salad dressing
Yields 10
Creamy, tangy, cheesy, salty, slightly bacony & sweet caesar salad dressing. Very similiar to the Opti Cook mayoniasse, boosted up Caesar style.

Ingredients
  1. 1 cup cauliflower, chopped
  2. 2 small garlic cloves, minced
  3. 1 tbs dijon mustard
  4. 1 tsp Worchestershire sauce
  5. 1 tsp Stevia
  6. 3 tbs lemon juice
  7. 2 tbs olive oil
  8. 1/4 tsp paprika
  9. 1/2 tsp onion powder
  10. 1/4 tsp salt (I use Herbamere)
Instructions
  1. In a saucepan, add cauliflower, cover with water and bring to the boil. Once boiling reduce heat to a simmer, let cook for appox. 15 mins until very soft. Drain well.
  2. In a mini blender or using a stick blender, blitz until creamy. Add the rest of the ingredients. Blitz again. Add the oil, a little at a time, blending after each addition until all is used. Blitz for a further 2 minutes until silky smooth.
  3. Let cool completely in the fridge, season and enjoy. Add more lemon if needed.
Notes
  1. Can be kept in the fridge for up to 7 days.

Serves 4
Use the dressing recipe to make a traditional Caesar salad, intensive phase style !

Ingredients
  1. 1/2 carrot, peeled length ways into thick strips
  2. 1 tsp Good Choice BBQ sauce
  3. Olive oil spray
  4. 1/2 cup cauliflower cut into florets including the core into cubes
  5. 1/2 tsp onion powder
  6. 1 Mini Cos lettuce, washed and torn into 3cm pieces (approx)
Instructions
  1. You need 1/2 cup approx of the Caesar salad dressing above for this recipe.
  2. For the carrot "bacon": Preheat oven to 200°C. Peel the carrot length wise into thick strips, using a regular peeler (see pic). Place on oven tray with baking paper. Coat with the BBQ sauce then spray with olive oil. Cook in the oven for 15 mins, turning once at 7 minutes. Lay on paper towel to ensure they stay crunchy.
  3. For the cauli "croutons": Toss the cauliflower in the onion powder, lay on a tray (can be on same one as carrot bacon), spray with oil and cook for 15 mins, until browned and crispy. Lay on paper towel to ensure they stay crispy.
  4. Place the torn cos lettuce in a big bowl. Toss with enough of the dressing to coat to your liking, tip into a bowl or plate, add the "bacon" and "croutons" and devour.
Notes
  1. Can can add anything you like to this salad.
  2. Dressing keeps for up to 7 days.
  3. Roasted veges are great with it too.

    The dressing sounds awesome! Any suggestions on a substitute for the stevia?

      Hi Laurie ! Really anything sweet, I use Stevia to keep it super low calorie, but can use agave syrup, honey or even a date if you aren’t concerned about the sugar & cals 🙂 hope this helps ! Joni

    Do you use liquid or powdered stevia?

      Hi mrslar ! I use powdered Stevia in my recipes, I find it gives the least “herby” flavour of the two 🙂 Cheers, Joni

    This looks so good. I might try marinating the carrot strips in liquid smoke and maple syrup a day before for a more ‘bacon-ey’ flavour
