Yakisoba noodles, so very simple and so very delicious !
A little like good old Chow Mien, but with the depth of flavour of Japanese dishes. Delicious street food reinvigorated for the Optifaster’s taste buds (or restrictive list , one of the two or both !) . Took me 25 mins from start to finish. Quick easy meal. You could definitely cook this recipe prior up to adding the zucchini noodles, then add last minute before microwaving if re-heating.
Betcha it won’t last that long !

Yummy, quick and simple noodle dish. Tastes like a spicy Asian flavour inspired bbq sauce, quite addictive !

Ingredients
- 4 tbs Worcestershire sauce, gluten free
- 3 tsp Vegan oyster sauce
- 4 tsp No added sugar, reduced salt tomato sauce
- 4 tsp Gluten free soy sauce or Tamari
- 1 brown onion, sliced
- 2 carrots, julienned
- 1 cup of cabbage, sliced thinly
- 3 spring onions, sliced thickly
- Cracked black pepper
- 1 medium red chilli, sliced (optional)
- 2 medium zucchini, spiralised into long noodles.
- 1 nori sheet crushed, for garnish, optional
- 1 tsp sushi ginger, sliced thinly for garnish, optional
- 1 tsp red capsicum, sliced thinly for garnish, optional
Instructions
- Mix all the sauces together in a bowl.
- Heat wok or frypan over medium-high heat. Cook onions and carrots for 5 mins, stirring. Add other vegetables and 3 tbs sauce. Stir fry for about 3 mins. Add a few shakes of black pepper.
- Turn the heat to medium-low and add the rest of the sauce (to your liking). Stir until bubbling.
- Once bowls ready to serve, add zucchini noodles. Stir gently with tongs until cooked through.
- Serve with garnishes, if using.
Notes
- For the sauces I used (all available from large supermarkets) -
- 1. Spring Gully vegan Worcestershire sauce
- 2. Ayam salt reduced vegan Oyster sauce (can use non-vegetarian one too)
- 3. Fountain No added sugar Tomato Sauce
- 4. Abundant Earth low salt Tamari
- Can substitute zucchini noodles with slendier konjac noodles.
- The cal and carb counts are not accurate as they are using full sugar and salt sauces (requested this is rectified) This recipe fits into the VLCD guidelines.
