A nice chunky gravy to have over vegetables
Ingredients
- 1 tbs olive oil
- 1 diced onion
- 1 tsp thyme
- 2 sliced garlic cloves
- 3 handfuls sliced mushrooms
- 1 handful cauliflower florets (1/4 cauliflower approx)
- 2 cups chicken or vegetable stock
- Salt and pepper
Instructions
- In a medium saucepan, add 1 tablespoon oil & heat. Add diced onion, 1 tsp thyme & 2 sliced garlic cloves. Sauté until golden. Add 3 handfuls sliced mushrooms & 1 handful of cauliflower. I use the diced core or stalk if I have it from making other things. Add 2 cups of chicken or vege stock and let simmer for same time as veges take to cook (1/2 hour). Remove a few spoons of sliced mushrooms & reserve to mix in afterwards if you like a chunky gravy. Blitz the contents of the saucepan until smooth. Season with a heap of black pepper & you're ready to eat.
Notes
- Freeze sauce in ice cubes for a quick sauce.
