Mushroom san choi bau

Yummy, filling & fresh lunch using slendier konjac noodles.

Ingredients
  1. 2 tbs rice bran oil
  2. 300g pkt sliced/whole mushrooms chopped finely
  3. 1 red onion sliced finely
  4. 2 garlic cloves minced
  5. 1/4 cup fountain "good choice" soy sauce
  6. Pkt Slendier angel hair noodles
  7. 1/2 iceberg lettuce, core cut out & leaves separated
  8. 1/2 cup beans sprouts
  9. 1/4 cup coriander (fresh) sliced
  10. 3-4 spring onions, finely sliced
Instructions
  1. Heat the vegetable oil in a large frying pan over a medium-high heat. Add the mushrooms, onion and garlic. Cook for 3-5 mins stirring, until the mushrooms start to break down and the liquid has evaporated. Add soy sauce & allow to cook off again for 3 mins. Rinse and prepare the noodles as per pkt & stir through the mushroom mix to warm.
  2. To serve, place spoonful’s of mushroom mixture into the lettuce leaves. Top with sprouts, and coriander.

    LoL … I have never left a comment before on a wed site … but I really felt I need to THANK YOU for all the time and effort you must have put in to make this web site… not mention your creativity… I have had a childhood disease which resulted in lack of mobility couple that with the drugs required, my weight was stuck fast .. ( also being a foodie of quality did not help ) but it has became a choice between mobility and what I thought satisfying taste meals and the choice became clear .. so next was the lap band… they put me the opti intensive , day 4 of steamed veg and I had concerns weather this was doable.. the a friend showed me your site … 12 days in NO cheating and more importantly NO crabbiness .. in fact I am fell great … family happy and no major disruptions making a lot less difficult for all… and that is a huge weight of my mind .. and that just some of the ways your efforts and creativity has touched my life… so when I say Thank you… please see diamond and rainbows AND all your dreams come true all around you … and just maybe you understand the happiness you have shared with me…. take care …Tracey
