Chinese chow mein noodles, tastes like the good old Maggi mix !

Very quick, very easy. Made for lunch a few times and fridged the leftover for a quick meal over the next couple of days. The mushrooms give it a “mincey” texture. A filling one for sure. Definitely need a spiriliser to make your noodles, although maybe you could just peel the zucchini. Also, the recipe calls for cabbage, but I didn’t have any yesterday, so you won’t see it in the pics.

This will be my last recipe for a few days as I’ve got festive stuff to do and places to be 🙂 including putting all the Xmas decorations up !

Chinese Chow Mein noodles
Yields 6
Quick and easy curry and soy flavoured noodles. Very meaty tasting with the diced mushrooms replacing the mince meat.

Ingredients
  1. 2 tbs olive oil
  2. 1 medium brown onion, finely diced
  3. 2 cloves garlic, crushed
  4. 300g mushrooms, finely chopped
  5. 1 tbs Keens curry powder
  6. 2 carrots, diced
  7. 2 stalks celery, finely diced
  8. 1 cup chicken stock
  9. 2 tbs gluten free soy sauce
  10. 2 zucchinis, peeled and spirilised on fine setting
  11. 1 cup green beans or snow peas, topped and sliced
  12. 1/2 cup spring onions, sliced, to serve
  13. 1 cup cabbage, finely sliced
Instructions
  1. In a large fry pan or wok heat oil on med heat. Add onion, garlic and mushrooms. Cook until browned.
  2. Add curry powder, carrots, celery, stock and soy sauce. Simmer for approx 15 mins until cooked. Add water if it gets a bit dry.
  3. Add the zucchini noodles, snow peas, spring onion and cabbage. Gently toss for a few minutes until just cooked.
  4. Season and serve ! Add more soy sauce if you like too.
Notes
  1. Can be refrigerated and eaten over 4-5 days.
  2. Not good for freezing as the zucchini noodles go watery. However, can me made minus the noodles, frozen in portions and reheated with the fresh zucchini noodles.

    This. Was. Amazing. Tasted like the real thing – who would have thought mushrooms could pose as meat and zucchini as noodles and I’d still feel like I was eating a delicious family staple 🙂
