A great creamy and crunchy snack for those times when ... You just want something yummy !
Ingredients
- 1 large eggplant
- Salt n pepper
- 1 tsp Paprika/oregano/any other spice mix
- Olive oil spray
- 1 cup cauliflower florets
- 1 lemon
Instructions
- Heat oven to 200 degrees.
- Cut eggplant into thick style chips, put between paper towel to dry out. Cut up & blend cauliflower into bread crumb consistency & mix with whatever seasoning you are using.
- Put the cauli mix on paper towel to dry out. After 5-10 mins tip the cauli crumb onto a plate.
- Roll a few of the eggplant chunks at a time in the cauli crumb.
- Place carefully on the tray, lightly spray with the oil & bake for 20-25 mins then turn & bake for a further 10-15 mins. Be careful not to burn them.
- Once out, eat quickly, squeezing lemon as you go so they stay crunchy.
Notes
- Not suitable to freeze.
