Crumbed eggplant chips

Ingredients
  1. 1 large eggplant
  2. Salt n pepper
  3. 1 tsp Paprika/oregano/any other spice mix
  4. Olive oil spray
  5. 1 cup cauliflower florets
  6. 1 lemon
Instructions
  1. Heat oven to 200 degrees.
  2. Cut eggplant into thick style chips, put between paper towel to dry out. Cut up & blend cauliflower into bread crumb consistency & mix with whatever seasoning you are using.
  3. Put the cauli mix on paper towel to dry out. After 5-10 mins tip the cauli crumb onto a plate.
  4. Roll a few of the eggplant chunks at a time in the cauli crumb.
  5. Place carefully on the tray, lightly spray with the oil & bake for 20-25 mins then turn & bake for a further 10-15 mins. Be careful not to burn them.
  6. Once out, eat quickly, squeezing lemon as you go so they stay crunchy.
Notes
  1. Not suitable to freeze.
