Ingredients
  1. 2 Cups of zucchini noodles (approx 1 or 2 zucchini)
  2. 3/4 Cup Cabbage
  3. 1 Medium Onion
  4. 1 Medium Carrot
  5. 10 to 12 Green Beans
  6. 1/2 Medium Capsicum
  7. 4 Sprigs Spring Onion
  8. 1 tbsp Finely Chopped Garlic
  9. 1/2 tbsp Finely Chopped Ginger
  10. 1 tbsp good choice/ low cal Tomato Sauce
  11. 1 tbsp good choice/ low cal Chilli Sauce
  12. 2 tsp Soy Sauce
  13. To Taste - Salt & Pepper
  14. 2 tbsp Oil (I prefer coconut oil or ghee for this one)
Instructions
  1. Spiralise enough zucchini to make 2 cups of noodles
  2. Peel and julienne carrot, slice onion, thinly sliced diagonally or finely chopped beans, julienne or finely chopped capsicum, finely chop spring onion, garlic, ginger.
  3. Heat oil in a pan add garlic,ginger spring onion white part and sauté until light brown, add onion and sauté until soft and pink. Add carrot and sauté for 2 minute in medium to high flame.
  4. Add green beans and sauté for a minute, next add capsicum, cabbage and sauté for another minute. Now add salt, pepper, tomato sauce, chilli sauce, soy sauce and mix everything well. (all sauce has salt so add less salt or taste and add salt if required)
  5. Add noodles and mix well to combine everything, add spring onion and mix again and turn heat off, leaving pan to sit for 2 minutes before eating.
Notes
  1. I wouldn't say this is too suitable for freezing as the noodles may go mushy when microwaving. Just cook & enjoy 🙂
