Indian Cauliflower Dhal

So, I reinvented my “usual” dhal/dal recipe, using the cauliflower as the lentils ! I think it turned out really well. A nice tasty addition to any Indian meal, or a meal in itself. The coconut essence adds a bit of “umph” to the flavour palette.

Indian cauliflower dhal

Ingredients
- 1 cauliflower, riced or grated
- 1 tbs coconut oil (or other oil)
- 1 brown onion, finely diced
- 2 tsp garlic, minced
- 2 tsp ginger, minced
- 2 tsp turmeric
- 1 tsp cumin, ground
- 1 tsp garam masala
- 1 tbs Keens curry powder
- 1/2 tsp chilli, ground
- 1 tsp coconut essence
- 2 tbs lemon juice
- 2 tbs chopped fresh coriander leaves
Instructions
- In a fry pan over medium heat, add coconut oil and onion. Stir, cooking for approximately 5 mins. Add the garlic, ginger, turmeric, cumin, garam masala, curry powder and chilli. Cook for a further 5 mins. Add cauli, 2 cups of water, coconut essence and lemon juice.
- Cook for 15 mins, stirring occasionally, until soft and creamy. Add more water if it gets dry. Taste and if I needs more cooking, cook for a further 5-10 mins.
- Serve with coriander and additional lemon juice if you please. Season liberally with salt and black pepper.
