Indian Cauliflower Dhal

I saw a recipe for cauliflower dhal recently in the Jamie Oliver collection and hurriedly clicked on it to see how he did it. Well, disappointingly for us, still used coconut milk and legumes with a bit of cauliflower thrown in.  

So, I reinvented my “usual” dhal/dal recipe, using the cauliflower as the lentils ! I think it turned out really well. A nice tasty addition to any Indian meal, or a meal in itself. The coconut essence adds a bit of “umph” to the flavour palette.

Indian cauliflower dhal

Ingredients
  1. 1 cauliflower, riced or grated
  2. 1 tbs coconut oil (or other oil)
  3. 1 brown onion, finely diced
  4. 2 tsp garlic, minced
  5. 2 tsp ginger, minced
  6. 2 tsp turmeric
  7. 1 tsp cumin, ground
  8. 1 tsp garam masala
  9. 1 tbs Keens curry powder
  10. 1/2 tsp chilli, ground
  11. 1 tsp coconut essence
  12. 2 tbs lemon juice
  13. 2 tbs chopped fresh coriander leaves
Instructions
  1. In a fry pan over medium heat, add coconut oil and onion. Stir, cooking for approximately 5 mins. Add the garlic, ginger, turmeric, cumin, garam masala, curry powder and chilli. Cook for a further 5 mins. Add cauli, 2 cups of water, coconut essence and lemon juice.
  2. Cook for 15 mins, stirring occasionally, until soft and creamy. Add more water if it gets dry. Taste and if I needs more cooking, cook for a further 5-10 mins.
  3. Serve with coriander and additional lemon juice if you please. Season liberally with salt and black pepper.
