Indian mint chutney , herby green goodness !
Well, I was a bit suss about how this would turn out, looks a bit like green sludge !
But don’t be scared, it was a great compliment to the tandoori skewers I made last night and all curries I would think !
If you’re looking for something fresh, vibrant & different to top your veggies with, give it a go !

Cook Time

Ingredients
- 1 zucchini, trimmed but unpeeled & chopped roughly
- 1 1/2 cups fresh mint leaves, chopped
- 1 cup fresh coriander leaves, chopped
- 1 green chilli, chopped
- 1/2 small onion, chopped
- 1 tsp ginger, minced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp garam masala
- 2 tbs lemon juice
- Pinch stevia (optional)
Instructions
- In a small saucepan with minimal water steam the zucchini , adding a few mint leaves for flavour.
- Strain over sink and with all other ingredients blitz in a food processor or using a stick blender until all combined and smooth. Adjust the tanginess and sweetness to your liking, I like a pinch of stevia added to mine.
Notes
- Note the yields are in tablespoons, so this recipe makes 30 tbs of chutney !
