Mayo, yes, mayonnaise, come to mamma !

Mayo, the holy grail of non-allowed foods. I’ve been experimenting for a while to make one opti friendly. There’s many cauli ones out there, mainly raw food ones, which I’ve made and, yes, they are creamy, but they taste like raw cauliflower 🙁 This one is cooked, so allow enough time to cool. Mix it up with the herbs and flavours to your liking. It goes without saying, it isn’t exactly like raw egg mayo, but beats not having it at all !

Cauliflower Mayoniasse
Serves 12
A creamy and tangy version of the real deal. Great to top things with and use as a salad dressing as well.

Ingredients
  1. 1 cup cauliflower, chopped
  2. 1 tbs Dijon mustard
  3. 1 tsp Stevia granules/powder
  4. 3 tbs lemon juice
  5. 2 tbs olive oil
  6. 1/4 cup fresh parsley or dill (optional)
Instructions
  1. In a saucepan, add cauliflower, cover with water and bring to the boil. Once boiling reduce heat to a simmer, let cook for appox. 15 mins until very soft. Drain well.
  2. In a mini blender or using a stick blender, blitz until creamy. Add the mustard, Stevia, lemon juice and herbs. Blitz again. Add the oil, a little at a time, blending after each addition until all is used.
  3. Let cool completely in the fridge, season and enjoy.
Notes
  1. The oil makes it super creamy, just like the "real one".
  2. Doesn't freeze too well, keep in fridge for up to 5 days.
  3. Flavour with things you like such as capers, dill, other herbs, tomato sauce, chilli, wasabi, BBQ sauce etc.
Nutritional Panel notes
  1. This is a US based scoring system, so notes fibre as a sub category of carbs, so you need to minus fibre to get the total carb count for the Australian & NZ calculation
