Mexican rice, easy & yummo

I always order this whenever we go out for Mexican food, I just love the flavours. Created for Opti intensive, it’s a good go-to and part of my weekly rotations ! Enjoy ! Great as part of the tex-mex feast !

Mexi Cauli Rice

Yummy dish, generally in my weekly rotation. Super quick and easy, fresh chopped tomato gives it a nice fresh kick

Ingredients
  1. 1 tablespoon coconut oil
  2. 1 cup red onion, small dice
  3. 1 teaspoon minced garlic
  4. 4 cups (about 1 medium) cauliflower, riced*
  5. 1 teaspoon coriander
  6. ½ teaspoon cumin
  7. 1 teaspoon dried oregano
  8. 2 zucchinis diced
  9. 2 carrots diced
  10. 1 capsicum diced
  11. 1 teaspoon salt
  12. 1 cup fresh tomatoes, small dice
  13. ¼ cup fresh coriander chopped
  14. 1 tablespoon fresh lime juice (or lemon)
Instructions
  1. In a large frypan, over medium heat, sauté onions in oil with a pinch of salt for 8-10 minutes, or until very soft and translucent.
  2. Add the dry spices, remaining salt, remaining diced vegetables, garlic (and tomato paste if using) and stir to combine, stirring and cooking another minute. (Add a tablespoon of water if the spices get stuck)
  3. Add cauliflower and sauté another 8-10 minutes, or until the cauliflower is soft. Turn off heat and stir in tomatoes, lime juice and coriander.
Notes
  1. *How to rice cauliflower: Cut the head in quarters, and then cut out the core. You can then either feed florets through the shredder tube of your food processor, or use a box grater to achieve a rice consistency

  1. This is a US based scoring system, so notes fibre as a sub category of carbs, so you need to minus fibre to get the total carb count for the Australian & NZ calculation

    Hi, Have you tried freezing this recipe? I was wondering if I could make a batch at the weekend, portion & freeze for during the week or for the next. It looks yum & will try it tonight.

      Definately. All you would expect is for the rice to be a little “mushy” , so I would undercook it and then on reheat it will be perfecto !!! Joni
