Quick scalloped zucchini bake … A good side dish for Chrissy day !

Very Simple, very tasty, slightly cheesy and creamy. This dish uses the milk allowance from the beverage section of the Optifast allowed foods list, half a serve per serve to be exact. I have not used milk before, but wanted something different than cauliflower puree. Could be a good one for the Xmas roast lunch as a side dish.

If you are a vegan, replace with almond or coconut milk. If you are on intensive and choosing not to use any milk allowance, simply replace with stock.

Doesn’t freeze well, no zucchini does, so need to make on the day or day before. But it is super quick n easy.

Scalloped Zucchini Bake
Serves 4
This dish uses 15 ml milk per serve, half an allowed serve as per Optifast guidelines in the beverages section. If you are a vegan and/or do not wish to consume the milk on intensive phase replace with alternatives such as almond or coconut milk or liquid stock. The milk gives a creamy finish

Ingredients
  1. 2 zucchinis, sliced thinly
  2. 1 brown onion, finely diced
  3. 2 tbs olive oil
  4. 1 tsp garlic, minced
  5. 1 tsp onion powder
  6. 1 tsp garlic powder
  7. 1 tsp paprika
  8. 1 tbs vegetable stock powder
  9. 60 ml milk
Instructions
  1. Preheat oven to 180°C. In a small bowl mix together the minced garlic, onion powder, garlic powder, paprika and stock powder.
  2. In a glass casserole dish, spread 1 tbs olive oil. Layer zucchini, then onion, sprinkle over a tbs of the flavour mix made in the step above and repeat until it is all used. Pour over the milk. Season with salt and pepper.
  3. Bake, covered with foil, for 50 minutes. Remove foil and continue to bake for a further 10 mins or until the top goes crunchy and brown.
  4. Remove and serve as a side dish or alongside a nice crunchy salad.
