Speedy curried celery and cauliflower soup

Had a craving for curried egg of all things, satisfied it with this little number. Very quick and easy. Creamy & has a great depth of flavour. Good one for the freezer and quick tasty meal.

Speedy curried celery and cauliflower soup

Ingredients
  1. 1 cauliflower cut into florets (about 6 cups)
  2. 4 sticks of celery sliced (about 2 cups)
  3. 2 tablespoons coconut oil (or olive oil)
  4. 2 onions, sliced
  5. 2 cloves garlic, crushed
  6. 1 tbs curry powder
  7. 4 cups water
  8. 2 cups chicken or vegetable stock
  9. 2 tablespoons fresh parsley
Instructions
  1. In a medium saucepan, heat oil over medium-high heat. Add onions, garlic and celery and cook until soft, stirring, for about 5 minutes. Stir in curry powder, cauliflower, water, and stock.
  2. Cover and bring to a boil. Uncover, lower heat, and simmer 20 mins until soft.
  3. Blitz until smooth. Season.
  4. Top with parsley and a shake of curry powder and devour !
Notes
  1. Freezes well in portions.
  2. Can substitute other vegetables as well.
