Stained glass coconut jelly squares … Awesome sweet desert plate

This is certainly not my creation, it’s been around for a while now, I’ve simply modified it to be intensive suitable. The milk used is from the allowance as noted by Optifast to use in drinks (tea/coffee). You could have four pieces of this desert (3cmx3cm) to equate to this allowance.  

It takes two overnights in the fridge, but very simple to make. Tastes really yummy, and coconut essence pulls all the flavours together. Good one if you are on desert duties !

Stained glass coconut jelly squares
Yields 15
Gorgeously festive & tasty creamy coconut jelly with bursts of lime and raspberry. Very yummy.

Ingredients
  1. 1 sachet red colour aeroplane jelly lite
  2. 1 sachet green colour aeroplane jelly lite
  3. 1 1/2 cups of milk
  4. 1 tsp coconut essence
  5. 1 tsp stevia
  6. 5 tsp powdered gelatine
Instructions
  1. Place 1 sachet of the jelly crystals into two seperate containers - 1 green and 1 red.
  2. Add 1 cup of boiling water to each. Whisk well with a fork until all the powder has dissolved.
  3. Allow to set in the fridge (preferably overnight or for at least 4 hours)
  4. Cut into small squares in a grid like pattern (see pic)
  5. Arrange squares in a 30cmx20cmx4cm casserole dish (approx)
  6. In a small saucepan, add the milk, coconut essence, 1/2 cup of water and Stevia. Gently warm, stirring, until the stevia is solved. Tip into a bowl to cool.
  7. Using the same saucepan, place back on the stove over medium heat and add 3 cms boiling water. In a bowl add 1/4 cup of water. Sprinkle the gelatine over the top and place over the saucepan. Gently stir until dissolved. Remove from the heat and mix in with the milk.
  8. Place in the fridge for approx. 15-20 mins until at room temperature, or cool to touch.
  9. Carefully tip the milk mixture over the jelly squares. Shake it so everything is settled nicely. Cover and allow to set in the fridge overnight.
  10. Cut into squares and serve !
Notes
  1. Can be hand held or served in small bowls.
  2. Ensure the milk jelly is cooled before tipping over the or else the colours in the red and green jellies will run.

    Hiya Joni – Could Coconut milk/cream be used in place of the normal milk?

      Yes, definately Calina ! Coconut milk (not cream) or any nut milk would be good. Also if you need use vegan jelly too (I did ) , cheers Joni
