Taco smarco … time for some spicy goodness

This is essentially mock taco mince, in a nutshell. It’s meaty, filling and spicy. Super easy to make and freezes well. A good one if you are cooking tacos for the fam bam & want to partake – guilt free.

Chunky mushroom taco mix
Serves 8
Super yummy and meaty taco mix, much like it's beef mince cousin.

Ingredients
  1. 1 tbs olive oil
  2. 1 brown onion chopped finely
  3. 2 cloves garlic, crushed
  4. 2 tbs Tex-Mex dry spice mix (see note)
  5. 1/2 tsp cayenne pepper (optional if you like the heat)
  6. 1 chopped large red chilli, seeds removed (again only if you like the heat)
  7. 200g button mushrooms cut finely, like mince meat
  8. 1/2 tin (70g) of tomato paste
  9. 2 cups beef stock
Instructions
  1. In a small frypan, add oil and fry off onion and garlic until translucent.
  2. Add tex-mex flavouring and stir.
  3. Add mushrooms. Fry for approximately 5 minutes until lightly golden.
  4. Add tomato paste and 1 cup of stock.
  5. Cook for 15 mins, stiring occasionally, adding more stock if needed. It should reduce to a thick meaty sauce.
  6. Season & serve with fresh coriander sprigs on top.
Notes
  1. You can make your own tex-mex spice dry mix if desired.
  2. If cooking for the family, double or triple the recipe depending on the amount of people. Cook their mince meat on another pan with some oil. Remove your portion before adding the browned beef mince to other family members portion.
  3. This recipe should not be too watery as it can be used to top opti friendly tortillas. Let it cook down longer if it is.
  4. Freezes well.
