Green soup for Halloween ! Quick & easy creamy asparagus & spinach soup … so nutritious too !

This soup is super easy- a great combination of greens, a good way to get this most essential colour in our diet as well. So super low in cal and carbs, perfect for VLCD. Make sure you do add the black pepper and lemon, as this is the key to getting it tasty ! I ate it cold as it was warm today, a good one for a summer soup I reckon !

 

Creamy asparagus and spinach soup

Ingredients
  1. 1 tbs olive oil
  2. 400g asparagus, ends removed and chopped
  3. 2 brown onions , chopped (can supplement leeks)
  4. 2 cloves garlic, sliced or crushed
  5. 1 stick of celery. chopped
  6. 1 litre of low salt chicken or vegetable stock
  7. 2 cups of baby spinach (approx)
Instructions
  1. Heat the oil in a medium saucepan. Add onion, garlic and celery. Cook for 10 mins.
  2. Meanwhile, cut the heads off the asparagus spears and set aside, chop the rest and add the saucepan. Add the stock.
  3. Bring to the boil and cook for 15 mins.
  4. Add the spinach leaves, let cook for 2 mins then blitz with a stick blender.
  5. Once creamy and smooth, add the asparagus heads. Let cook for 5 mins.
  6. Squeeze lemon into the soup, add black pepper and salt and serve.
Notes
  1. If you don't like the texture of the having the spears whole you can just add the whole lot in together at the start.

      Definately Tracey, just avoid using the frozen spinach for it if possible. Use baby spinach leaves in the bags fresh 🙂 Joni
