Super quick & crispy veggie shards = chunky chips !

Easy peasy chips technique, I’ve done carrot and zucchini, could be used with others. They were great, give a go when you have the oven on for something else.  The key is using two trays of the same size and sandwiching the veggies in between. This is certainly not my invention or anything close, I just found that using this technique means you only need to use spray oil. Very much within the daily oil allowance. As you can see in the pics, they certainly stand up by themselves, no soggy chippies !

You can use any seasoning you like, chicken stock powder, Moorocan seasoning, nutmeg, grill or BBQ dry seasoning or salt, then add vinegar afterwards. I like to dip into a combo of BBQ and Tomato (low cal) sauces.

Quick crunchy veggie shards
Serves 2
Super crispy, skins even bubbling, very moorish veggie shards, much like chunky chips !

Ingredients
  1. 1 carrot
  2. 1 zucchini
  3. Olive oil spray
  4. Seasoning of your choice
  5. *you need two trays that are exactly the same so they are sealed in between them* - see pic
Instructions
  1. Preheat oven to 180°C.
  2. Cut vegetables thinly length wise.
  3. Mix with preferred seasoning
  4. Lay on tray, spray with olive oil spray.
  5. Place other tray directly on top. If the trays are not non-stick, place baking paper underneath and on top of the fries so they don't stick.
  6. Once it has reached temperature, place in oven, check every five minutes until they are to your liking.
  7. Once cooked, lay on paper towel to cool a little as this will crisp them up further.
Notes
  1. Make sure the two trays are the same so there is tight fit between them in which to sandwich the sliced vegetables.

      Hi Tania !

      I love these with my KFC rip off spice mix from my vegan “chicken” pieces recipe. Also with just paprika & a tsp of stock powder (chicken or vegetable) or even Chinese 5 spice mix ! Also plain salt and then sprinkle over a little white vinegar just when you are about to dig in !

      Here’s the spice mix recipe as I can’t seem to link these up !

      OptiCook Vegan KFC Copy Cat Spice mix
      1 tbs paprika
      1/2 tbs onion salt
      1/2 tsp celery salt
      1/2 tsp dried sage
      1/2 tsp garlic powder
      1/2 tsp ground allspice
      1/2 tsp ground oregano
      1/2 tsp chili powder
      1/2 tsp black pepper
      1/2 tsp dried basil
      1 tsp Herbamere or salt, to taste.
      (or you can use a suitable store bought chicken spice mix)
